Menu 2024 Lightly smoked venison tartar with caramelised chestnuts, taralli, and soy mayonnaise / Tropea red onion stuffed with chestnuts, crispy bacon, and salted caramel sauce / Carnaroli risotto with hot chestnuts, cottage cheese, and puffed quinoa / Venison fillet in a crust with chestnut stuffing, chestnut purée, and red cabbage / "Castamisu": Castagnotti filled with chestnut mousse, mascarpone cream, chocolate crumble, and mocha ice cream (The 2025 menu will follow in the next few weeks)
