Venison tartare, salty chestnut crumble, marinated carrots and dried herbs / Chestnut raviolini filled with cod, caramelised chestnuts and potato mascarpone sauce / Guinea fowl breast stuffed with chestnuts, endive salad, beetroot and pumpkin purée / Chestnuts, spicy Gorgonzola, white chocolate, pears and mustard / Chestnut cream, glazed chestnut ice cream, caramelised chestnuts and dark chocolate foam
